Ingredients needed for Red Tamarind Chutney
250 gms. tamarind
2 cups sugar or Jaggery ( abt 200 grams )
Salt to taste
1/2 tsp chilli powder
½ inch piece ginger
1 tbsp Jeera
How to prepare the Red Tamarind Chutney?
Roast the Jeera seeds without oil on a fry pan till they turn brown.
Soak the tamarind in lukewarm water to soften and prepare the pulp, strain.
Put the pulp in a sauce pan on fore and on low heat, till it starts boiling.
Add sugar ( or Jaggery), salt and chili powder , roasted jeera seeds and keep stirring and cooking on low heat till it gets thicker.
A small piece of ginger can be added ( optional ) and later removed. Ginger will give you an extra flavour.
As the desired consistency is achieved, remove from heat.
Let it cool to the room temperature. Store in an airtight jar which has a lid.
Notes
Jaggery will give you the best flavour for this Lal Imli Chutney / Red tamarind Chutney.
The Lal Imli Chutney will thicken up as it cools down. So remove from fire when the chutney gets somewhat thick.
