Brinjal Masala


Ingredients needed for the Brinjal Masala
5 brinjals sautéed, whole, quartered with stem intact
2 stalks curry leaves
1 piece ginger
2 green chillies
1 onion sliced fine
1 tomato, ground to paste
Salt to taste
½ tsp turmeric powder
1½ tsp chilli powder
cooking oil as needed
tsp mustard

How to prepare the Brinjal Masala?
Heat enough oil in a fry pan to saute the slit brinjals till they are golden and the skin gets crispy. Keep aside.
Heat about 2 tbsps of oil in a pan, splutter mustard seeds. Add sliced onions, sauté till golden, add ginger and green chilli paste.
Saute for a minute. Add ground tomato paste and a cup of water. Let it boil for a minute.
Add the fried brinjals, salt, turmeric powder and chilli powder.
Simmer till the gravy thicken. When you remove from fire the gravy should coat the brinjals nicely.
Remove and serve hot.

Notes
This curry goes well with Chappathies and rotis.

Brinjal is supposed to help you block the formation of free radicals and is also said to be a source of folic acid and potassium. So add Brinjals to your diet.
