Vegetable Salna Tamil Nadu Style


Ingredients needed for Vegetable Salna
1/2 cup cubed carrot
1/2 cup cubed potato
2 tbsps diced Capsicum
Green chilli – 1 or 2
1 tsp red chilli powder
1 tsp coriander powder
Salt to taste
2 cups Water
3 tbsps of Oil
1/2 cup chopped onion
1/2 cup chopped tomato
2 tbsps chopped coriander leaves
1 tbsp ginger garlic paste
1 Cardamom
1 tsp Saunf
1 Bay leaf
a small piece of Star anise
3 Cloves
1" piece Cinnamon
1/2 tsp cumin seeds
2 tbsps fresh grated coconut

How to prepare Vegetable Salna?    
Heat two tsps of oil in a fry pan. Simmer and add the whole garam masalas, sauté.
Add chopped onion and fry till they are transparent.
Add chopped tomato, ginger-garlic paste and sauté for a minute or two.
Add the coriander leaves followed by fresh grated coconut. Cook for a minute or two. Remove and let cool.
Grind to a smooth paste. Add water if needed.
Heat two tbsps of oil in a small pressure pan. Add ground paste and sauté for 3-4 minutes.
Add the whole green chillies, cubed carrot, potato, capsicum along with chilli powder, coriander powder and salt to taste to the pressure pan. Add two cups of water and mix well.
Pressure cook for 3-4 whistles. Remove and let cool.
Open, garnish with coriander leaves and serve hot.
Serve this yummy Vegetable Salna as a side dish to Parotta, Idli, Dosa, Chapathi or Biryani.
