Urulankizhanghu / Potato Pancake


Ingredients needed for Potato Pancake 
1 cup rice flour
1/2 cup potato peeled and grated nicely
1/4 cup onions minced finely
2 tbsps peanuts roasted and crushed slightly
Salt to taste
oil as needed for frying pancakes

How to prepare Potato Pancakes?
Mix all the ingredients together in a bowl.
Add a little water (about 4 tbsps) and knead nicely to prepare a smooth dough.
Divide the dough in to small lime sized balls.
Put each ball on a plastic sheet and spread nicely with your fingers.
Heat a Dosa / chapathi tawa.
Put each of the rounds and cook like a thick paratha.
When one side gets cooked flip it over and then pour a little oil around the edges. Spread nicely and flip it again.
Remove when it gets golden on both sides.
Serve hot with coriander chutney
