Potato Brinjal Fry / Poriyal

Ingredients needed for Potato Brinjal Fry
1 cup small Brinjal cubed
1 cup potato peeled and cubed
1/2 cup onion chopped
4 Red chillies
few curry leaves
1 tsp mustard seeds
1/2 tsp turmeric powder
1 tsp sambar powder
2 tbsps Oil
salt to taste

How to prepare Potato Brinjal Fry?
Heat oil in anon stick fry pan, splutter mustard seeds. Add chopped onion, broken red chillies and curry leaves and fry for a while.
Then add brinjal and potato pieces. Mix well.
Add sambar powder, turmeric powder and salt to taste.
Sprinkle a little water, just enough for the vegetables to cook. Mix well.
Simmer and cover with a lid. Cook for few minutes till done.
Open the lid and dry out the excess moisture.
Garnish with chopped coriander leaves if you like and serve with rice.
