Ingredients needed for Mathanga Erissery2 cups yellow pumpkin pieces ( cut into small cubes )
1/2 tsp turmeric powder
1 tsp chilli powder
2 cups grated coconut
1 tsp jeera / cumin seeds
Salt to taste
For tempering :2 tbsps coconut oil
1/2 cup grated coconut
3-4 red chillies broken into two
handful curry leaves
1/2 tsp mustard
How to prepare Mathanga Erissery?Cook pumpkin pieces with just enough water, salt, turmeric and chilli powders till the vegetable gets tender.
Grind grated coconut, cumin seeds to a nice paste and add to the vegetable. Mix well. Add water to bring the gravy to the right consistency.
Bring to boil. As soon as it starts bubbling remove from fire.
Heat oil in another fry pan. Splutter mustard, then add red chillies, curry leaves and the grated coconut. Fry till coconut turns golden. Keep stirring continuously else the coconut will get burnt.
Add the fried coconut mixture to the Pumpkin Erissery, mix well.
Serve Pumpkin Erissery with Rice, Sambar etc.
