Bread Cutlets

Ingredients needed for Bread Cutlets
2 boiled potatoes
1 green chili (finely chopped)
1 inch ginger piece (chopped)
2 tblsp boiled peas (optional)
1/2 tsp red chili powder
1 tsp garam masala powder
1/2 tsp dry mange powder
1/2 tsp mustard seed
1 tsp oil
4-5 curry leaves (optional)
Salt to taste
4 slices of bread (remove the brown edges)
Oil for deep frying

How to prepare bread cutlets?
Boil, peel and mash the potatoes nicely.
Heat a little oil in a kadai/wok, splutter mustard seeds and add curry leaves.
Add chopped green chilli and ginger, saute till they turn colour.
Add red chili powder, garam masla powder, dry mango powder and salt. Saute till the raw smell goes.
Add boiled green peas and mashed potatoes. Mix well and cook for 2-3 minutes. Remove and keep aside to cool.
Divide the mixture in to small portions and keep aside.
Take a cup of water in a wide plate, dip a bread slice into it so that that the bread gets just wet. Immediately remove and squeeze the extra water out pressing the slice in between your palms.
Now place the filling at the center of the slice and shape it in to a cutlet / roll.
Prepare the remaining bread slices and keep aside.
Now heat oil for deep frying in a heavy bottomed pan. when the oil is ver hot, simmer and put in two bread cutlets at a time. Then slowly bring the it to medium flame and fry till they are uniformly golden.
Drain on the kitchen towel and sprinkle chat masala over it.
Serve hot with green chutney.

Points to Note
Please do remember to squeeze out all the water from the bread slices, otherwise will splatter while frying  in the oil.
See that when you shape the cutlet the filling is covered from all sides. Otherwise the cutlet might break in the oil.
You can add some veggies like finely chopped carrot, beans, sweet corn and onion in the potato mixture.
You can give them any shape like, oval, ball or heart shaped. You can shallow fry them in a flat tikki form.
