Avaraikka Paruppu Thoran

Ingredients need for the Avaraikka Paruppu Thoran
1 cup cleaned and chopped avaraikka
2 tbsps green gram dhal / pachaparuppu
2-3 tsps oil
Salt to taste
3-4 red chillies cut into bits
Handful curry leaves pinched
1/2 tsp mustard.seeds
1/4 tsp turmeric powder
red chilli powder optional

How to prepare Avaraikka Paruppu Thoran?
Clean the dal and soak it for about 10 minutes, then drain and keep aside.
Heat oil in a fry pan, splutter mustard seeds. Add red chillies and curry leaves, fry till the curry leaves turn golden.
Add the soaked dal and fry for a minute or two till the colour changes lightly and an aroma comes.
Add chopped avaraikka to this, with salt to taste, turmeric powder and red chilli powder (optional).
Cover and simmer, if needed add a little water for the vegetables and the dal to get tender.
Remove the lid and add the grated coconut to the vegetables and mix well.
Avaraikka Paruppu Thoran is ready to serve as a side dish with rotis / rice
