Aloo Paratha


Ingredients for the filling
3-4 cups of mashed potatoes
2 green chillies finely chopped
1/4 tsp red chilli powder optional
1/2 tsp garam masala powder
1 tsp amchur
3 tbsp coriander leaves fresh, chopped
Salt to taste

Ingredients for the dough
3 cups whole wheat flour
1/2 tsp salt
2 tsps oil
water as needed for kneading the dough

oil / ghee for frying parathas

To knead the dough
In a bowl take the whole wheat flour, salt and oil. Mix well.
Add water as and when needed to knead to a soft and pliable dough. Set aside for 20 to 30 minutes.

To prepare the filling
In a bowl add mashed potatoes, chopped green chillies, garam masala powder, amchur powder, red chilli powder, chopped coriander leaves and salt to taste. Mix well to prepare the filling and keep aside.

To prepare aloo parathas
Divide the aloo / potato filling into small lemon sized balls and keep aside. Divide the dough in to small portions to prepare small puris.
Place one ball of the filling on top of a puri and cover it with another puri.
With a little water, seal the edges and then roll out gently in to a chappaty / paratha.
Similarly prepare parathas with the filling and keep aside.
Heat a non stick tawa. Place one paratha on it and wait for a minute. Flip the paratha and sprinkle oil on the top and around it.
Fry till it gets golden on both the sides.
Continue cooking with the other parathas in the same way.
Serve hot with pudhina / coriander chutney, pickles and curd / raita.
