Koottu Curry
Ingredients needed for Koottu Curry
2 cups yam cut into small pieces
1 cup Raw Banana cut into small pieces
1 tsp chilli powder
1 tsp coriander powder
1/2 tsp turmeric powder
5 green chillies
Handful curry leaves
To Roast and grind to a paste
3 cups grated coconut
1/2 tsp cumin seeds
5 red chillies
For Tempering Koottu Curry
2 tbsps coconut oil
1/2 tsp mustard seeds
5 red chillies broken into bits
1 tbsp Thenga Kothu
few Curry leaves
How to prepare Koottu Curry?
Heat oil in a pan, roast Coconut, jeera/cumin and red chillies to a golden colour. Grind to a smooth paste and keep aside.
Now take chopped yam and banana pieces, chilli powder, coriander powder, turmeric powder, slit green chillies and curry leaves together in a vessel with just enough water to cook tender. Add salt to taste.
When the vegetables are tender, add in the ground coconut paste. Add water if needed.
As the gravy thickens, remove from fire. Temper with the ingredients. Serve
