Coconut Rice


Ingredients needed for preparing Coconut Rice
1 cup Raw Rice
1 cup freshly grated coconut
Salt to taste ( about 1 tspful )

For Tempering
1 tbsp oil ( coconut oil preferred )
1 tsp mustard seeds
2 tsps split Urad Dal
2 tsps Channa Dal
5-6red chillies broken into bits
Handful Curry leaves

How to prepare Delicious Coconut Rice?
Cook rice with salt in a pressure cooker with just enough water to cook them. The grains should be separate. The water needed will be  about 2 to 2 1/2 cups for a cup of raw rice.
Heat oil in a wide fry pan / Kadai.  Splutter mustard seeds.
Add broken red chillies, Urad Dal, Channa Dal, Curry Leaves, stir till the dals turn golden in colour.
Now add the grated coconut  and stir for a minute. Do not let the coconut change colour.
Slightly sprinkle a little salt to the coconut mixture, remember you have already added salt to the rice.
Now add the cooked and cooled rice. Mix well.
Garnish with fried cashewnuts and serve hot with a spicy side dish.
