Brinjal Lima Beans / Mochai fry
Ingredients needed for Brinjal Lima Beans fry
2 cups brinjal cubes
1 cup dry lima beans
1 cup onion chopped finely
1 cup tomato, chopped finely
1 tbsp sambar powder
a pinch turmeric powder
1 tsp ginger and garlic paste
1 tbsp oil
1/2 tsp mustard
Salt to taste
How to prepare Brinjal Lima Beans fry?
Soak Lima Beans in water for about 8 to 10 hours. Remove the white skin (it will come out easily when soaked well) and cook till soft.
Cut the brinjals into medium size pieces and put it in water. Chop the onion and tomato finely.
Heat oil in a kadai and splutter mustard. Add chopped onion along with ginger garlic paste and fry till onion turns transparent.
Add chopped tomatoes and fry for a while. Add sambar powder, turmeric powder and salt. Mix well.
Add brinjal pieces and lima beans and sprinkle a little water. Simmer and cover. Cook until the brinjals are soft. Remove the lid and keep it on low flame till the moisture gets dried up.
