Double Beans Masala Fry


Ingredients needed for Double Beans Masala Fry
3/4 cup fresh Double Beans
2 Onions
1 Tomato
1" piece ginger
4 Garlic flakes
1 1/2 tsp coriander powder
3/4 tsp chilli powder
1/4 tsp turmeric powder
3/4 tsp roasted Cumin powder
1/2 tsp garam Masala powder
Salt to taste

Ingredients needed for tempering
1 tbsp Oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp green chillies, finely chopped
few curry leaves

For Garnishing
2 tbsps coriander leaves - 2 tbsp chopped

How to prepare Double Beans Masala Fry?
If you are using the dried double beans wash and soak them overnight or for atleast 5-6 hours. Pressure cook til soft. If you are using fresh beans just pressure cook them with salt to taste till soft.
Chop onion, green chillies and tomatoes finely.
Heat oil in a pan, splutter mustard seeds and add cumin seeds, finely chopped green chillies and curry leaves.
When the green chillies turn shade add finely chopped onions, ginger, garlic and saute till onions turn transparent.
Add chopped tomatoes, chilli powder, coriander powder, turmeric powder, cumin powder, garam masala powder, salt needed and cook until tomatoes become mushy and oil starts separating.
Add cooked double beans, a little water and simmer. Leave it covered till everything blends well.
This is a dry dish like a north indian style sabzi.
Garnish with coriander leaves and serve as a side dish either with rice or chapati.
