Uppilitta Kanni Manga / Salted Baby Mangoes


Ingredients needed for Salted baby Mangoes
1 kilo baby mangoes
1 1/2 cups rock salt
enough water to cover the mangoes abot 3-4 cups

How to prepare uppilitta Kanni Manga / mangoes in brine ?
Boil the water in a big vessel and add the salt to it.
Stir well so that the salt blends well with water. Let Cool.
In the meantime, wash and clean the mangoes. Pat with a towel and dry them nicely.
Remove the extra long stems if any.
When the water gets cooled down, add the mangoes to it. See that the brine covers the mangoes nicely.
Check for salt. If the salt is less the mangoes will go bad. Let it be on the higher side.
Transfer the contents to a Bharani / a porcelain jar and cover it up with a cloth. Tie it up nicely so that air doesn't get in.
Open once in 2-3 days and mix well so that the salt and mangoes mix nicely.
Leave it in a dark place at least for a month.
Then you can use it for Kanni Manga Achar, Kanni Manga Pachadi etc.
