Semiya / Vermicelli Uppuma


Ingredients needed for Semiya Uppuma
2 cups Semiya / Vermicelli
3 tbsps ghee
1 tsp mustard
3 red chillies cut into bits
8 peppercorns
1 stick cinnamon
4 cloves
4 green cardamoms
2 tsps Urad Dal
1 tbsp groundnuts / peanuts
1' piece ginger
5 green chillies
3/4 tbsp chopped garlic
3/4 cup finely sliced onions
4 cups water
1 tbsp lime juice

How to prepare Semiya Uppuma?
Heat about 1/2 tbsp of the ghee in a fry pan and roast the Semiya till it gets hot to the touch. It should not turn colour or get burnt.
Remove from the fry pan and add the remaining ghee in to it.
Splutter mustard, and then add the whole garam masala plus the peanuts and Urad Dal. .
When the Urad Dal and the peanuts start changing colour add the crushed ginger, green chillies and the garlic.
Saute  till a nice aroma comes and then add the sliced onions.
As the onions start turning transparent, add water, salt and the lime juice.
As the water starts boiling sprinkle the Semiya / Vermicelli.
Bring to boil and simmer till the vermicelli gets cooked.
Stir well in between if needed so that the masala blends well with the semiya.
Serve hot with Chutney
