Semiya Payasam / Vermicelli Kheer

Ingredieents needed for Semiya Payasam
1 cup semiya ( Vermicelli )
1 1/2 cups water
1 cup full cream milk
1/2 cup sugar
1 tbsp cashew nuts split
1 tbsp raisins
1/2 tsp cardamom powder / 3 whole cardamoms
2 tsps ghee

How to prepare Semiya Payasam?
Heat 2 tsps ghee in a thick bottommed pan. Fry the split cashews to a golden colour, remove and keep aside. Then add the raisins, fry till they puff up, remove and keep aside.
In the remaining ghee fry the vermicelli to a nice golden colour.
Add water and cook the vermicelli till it gets cooked. Now add the milk. Stir well.
Simmer the flame and add the sugar and the cardamom powder. Mix well. If you are using whole green cardamoms just split them open and then add.
Once the sugar gets mixed up nicely add the fried cashew nuts and raisins to the Payasam / Kheer.
Serve hot.

You can prepare the payasam with just milk if you are using toned milk. Just boil the milk first. Then simmer the flame and then add the fried vermicelli. Stir now and then and check to see it doesn't stick at the bottom.
