Ingredients needed for Pork Fry without coconut
500g of Pork cut into small pieces
1 cup finely chopped onions
1 small piece ginger, peeled and chopped
5 garlic cloves, peeled and crushed
5 tbsp of vinegar
1/4 tsp of Turmeric powder
1 tbsp red chilli powder
5 Green Chillies, slit
3 green cardamom
1/2 tsp black peppercorns
a small piece cinnamon, broken
4 tbsp oil
Salt to taste
few curry leaves
How to prepare Pork Fry without coconut?
Mix the pork with turmeric powder, chilli powder, ginger, garlic, vinegar and salt. Keep aside for 10 minutes.
Add water and pressure cook until the pork is nearly cooked.
Remove from heat and leave it aside to cool down.
Heat oil in a frying pan, add the whole spices, chopped onions, green chilli and curry leaves. Saute till the onions are golden.
When the pressure cooker cools down and reaches the room temperature, open the lid.
Add the cooked pork along with any extra water to the fry pan.
Stir fry until the pork is well cooked and the gravy dries up.
Serve pork fry with plain rice / pulao etc.
