Pavaikka / Kaippakka Curry


Ingredients needed for Kaippakka / Pavaikka curry
2 cups of bitter gourd pieces
tamarind - lemon size / 2 tsps
1 onion / handful of sambar onions
1 cup chopped tomatoes
2 green chillies
Handful curry leaves
1/2 tsp turmeric powder
1 tsp red chilli powder / as per your taste

For Tempering the Pavaikka / Kaippakka Curry
coconut oil
mustard seeds

How to prepare Pavaikka / Kaippakka Curry?
Slice Pavaikka / bitter gourd into thin round pieces.
Cook them with salt, turmeric powder, chilly powder, green chilly, chopped onion, tomato and the tamarind pulp. Add enough water to prepare the gravy as per youe taste and consistency.
Add less water to bring to a thick consistency. Only about a cup of water will be needed if you want a thicker gravy. Add more if you like to serve with rice as an Ozhichu Koottaan.
Heat oil in a tempering pan, splutter mustard seeds, add curry leaves, pour over the Pavaikka / Kaippakka curry.
