Ingredients needed for Parippu Pradhaman
1 cup Green Gram Dal / split Moong Dal
1 cup first extraction of coconut milk
4 cups of the second and third extractions
of coconut milk
2 cups grated jaggery
2 - 3 tbsps of ghee
2 - 3 green cardamom crushed
1 tbsp split cashewnuts
1 tbsp coconut cut in to small bits and fried in ghee
How to prepare Parippu Pradhaman?
Roast the green gram dal and cook the dal with just enough water to get it soft. Mash the dal and keep it aside.
Extract fresh Coconut milk and you might need one full big coconut for the amount of milk you need for the recipe.
Now heat one tbsp of ghee in a pressure pan add the mashed dal. Fry till the ghee separates. If needed add a little more ghee while frying the mashed dal.
Add jaggery and the third extraction of the coconut milk and keep on stirring.
Stir the jaggery till it melts nicely and starts boiling. Simmer and let it boil till the amount of the liquid gets half.
Now add the second extraction of the milk and continue in the same way till it gets thicker.
Then you add the first extraction and check for the sweetness. If needed add a little sugar, mix well and put out the flame.
Leave it for bout half an hour.
Later heat the remaining ghee, fry the cashew nuts, and coconut pieces . Pour over the Pradhaman.
Sprinkle the crushed cardamom over and cover it.
Serve either hot or cold.
