Mutton chops, a chettinad recipe


Ingredients needed to cook the mutton
½ kilo Mutton
1 cup peeled small onions
1 Tomato
1 tsp ginger garlic paste
1 tbsp Chilli powder
2 tbsp Coriander powder
1 tsp Saunf / Fennel seeds
¼ tsp turmeric powder
Handful curry leaves
Salt to taste

Grind to smooth paste 

3 tbsps of coconut
8 Cashewnuts
1 tsp saunf / fennel seeds

Ingredients for the Chops
1 onion minced
1 tomato minced
10 flakes of Garlic minced
Salt to taste

Ingredients needed for seasoning 
2 sticks of Cinnamon
2 cloves
1 star Anise
handful curry leaves

How to prepare the Mutton for the Chettinad style Mutton chops?
First mix mutton pieces with a teaspoon of oil, fennel seeds and the curry leaves. Keep aside.
In the pressure pan, heat oil, add the minced onions  and the tomato pieces,
Saute for 2-3 minutes and then add the mutton pieces and the ginger garlic paste.
Stir well till the oil starts oozing from the sides of the pan.
Now add the chilli powder, coriander powder and turmeric powder. Mix well.
Add  a cup of water to the pressure pan and about half the salt needed for the dish.
Pressure cook the mutton pieces till they are three fourths done, that is cook in simmer flame for 5 minutes after the first whistle. 

How to prepare the Mutton chops? 
Heat oil in a fry pan, season with the ingredients mentioned under seasoning. Now add the minced onion, garlic and the tomato pieces till the tomato becomes pulpy and very very soft.
Add the ground coconut paste along with a little salt and chilli powder. Mix well and then add the cooked mutton pieces with the gravy.
Stir well and simmer the flame once the gravy starts boiling, till you get the desired consistency.
Meanwhile check for salt  and chilli, add if needed.
As the gravy dries up the curry might get burnt and so keep on stirring till you reach the right consistency.
Sprinkle lime juice on top and Serve garnished with coriander leaves
