Mixed Vegetable Stew / Ishtu


Ingredients needed for Mixed Vegetable Stew / Ishtu
2 potatoes cubed
2 onions cubed
1 carrot cubed
3-4 green chillies slit
1/2 cup shelled green peas
1 tsp whole black pepper
1 tbsp coconut oil
1 cup thin coconut milk + 1/2 cup thick coconut milk
Salt to taste
2 pieces cinnamon
2 cloves
1 small piece ginger
2 garlic flakes
few curry leaves

How to prepare Mixed Vegetable Stew / Ishtu?
Peel potatoes and onions, cut them in to small pieces
Scrape and cut carrot in to small pieces.
Crush ginger and garlic, keep aside.
Heat oil in a fry pan. Put in the cinnamon and cloves.
Then add crushed ginger, garlic and green chillies. Mix well till the green chillies turn shade.
Now add cubed onions and potatoes. Mix well.
After a minute add cubed carrot pieces, green peas and the whole pepper. Mix well and saute for a minute.
Pour in the second / thin coconut milk with salt.
Mix well, cover, simmer and cook till the vegetables get tender.
Open the lid and add the first and the thick coconut milk to it.
Mix well. As the comes to boil again, remove and add the curry leaves.
Cover and leave it aside for 5 minutes before serving.
Serve this with Idli, Appam, Poori, bread etc.
