Ingredients needed for Juicy Chicken Roast
A whole chicken
Salt and Pepper as needed or about 1 tbsp each
2 tbsps Oregano
2 cubes of butter
2 onions halved if small or quatered
3 small carrots cut in halves
2 medium sized potatoes halved
How to prepare the Juicy Chicken Roast
Wash the chicken and apply lime juice on the top of the chicken as well as inside the cavity area.
Mix salt, pepper and the oregano together and apply inside the chicken cavity, under and outer parts of the skin from all the sides of the chicken.
Put half the portion of the carrots, potatoes and onions into the cavity. Baste the chicken with melted butter inside and outside the chicken. Place the chicken in the roasting pan, spread the rest of the vegetables around the chicken and apply the remaining butter on the vegetables and the chicken.
Cover te roasting pan with the aluminum foil and place the pan in the preheated oven for two hours.
Remove after 2 hours or until the chicken is cooked roasted and juicy.
Let it rest for 15 minutes and then carve it on the dining table before serving.
