How to prepare Pulikaachal, a traditional Tamil Nadu Recipe?


Ingredients needed for Pulikaachal
150 grams or about 1 full cup tamarind
2 tspfuls rock salt
1 tbsp Fenugreek seeds
10 - 12  whole red chillies
1/2 tsp turmeric powder
1/2 tsp Asafoetida powder
1 dst sp mustard seeds
1/4 to 1/2 cup Gingelly / til oil as required
1 tbsp Channa dal
2 tbsps Peanuts (use only raw peanuts and  not roasted )
Handful Curry Leaves

How to prepare Pulikaachal ?  
Soak the tamarind in warm water for bout half an hour and extract thick juice.
You should be getting about 2-3 cups of thick extact from this 1 cupful tamarind.
Dry roast methi seeds an.d keep aside
In the same pan add a little gingelly oil and fry half of the channa dal along with half of the Red chillies. Let cool and grind them together with methi seeds and asafetida to a fine powder.
Heatthe remaining oil into the pan and splutter the mustard seeds.
Add the peanuts and fry till they turn golden and crispy. Add the remaining channa dal and fry till it turns golden.
Add the remaining red chillies and curry leaves as well, saute it for a few minutes.
Now add turmeric powder and salt to Tamarind extract mix well.  Add  the mixtureslowly into the pan.
As it starts boiling, simmer and let the extract boil till it gets to a thick consistency.
Now add the roasted and powdered  fenugreek seeds and bring it to boil again.
Simmer ad cook till the oil starts oozing out.
Remove from fire and let cool. Store it in a dry and airtight container.
You can store for a fortnight in the refrigerator.
