There are two ways of making mayonnaise at home. One is by the hand beater or the electric beater method and the other is the food processor / mixer method.
Ingredients needed to make mayaonnaise at home
2 egg yolks
Salt to taste ( about 3/4 tsp will be needed )
1/2 tsp mustard powder
1/8 the tsp sugar
a pinch of chilli powder
4-5 tsps of lime juice / white vinegar
1 1/2 cups of olive oil or salad oil
4 tsps hot water
How to prepare mayonnaise at home using hand / electric beater?
This method is for making mayonnaise by the hand beater or the electric beater. If you are using Electric beater use medium speed.
You will have to beat yolks, salt to taste, mustard powder, chilli powder and a tablespoon of lime juice in a small bowl till they are thick and creamy. Add 1/4 cup oil, drop by drop, beating continuously all the while. Add one tsp each of lime juice and hot water and add 1/2 a cup oil in a steady stream in to the mix beating constantly. Then mix in the remining lime juice and water and slowly beat in the remaining oil.
Check the consistency of the mayonnaise. If you like it thinner add a little extra water. Cover and refrigerate until you use it. This mayonnaise should be used within a week.
This recipe yields about 1one and a half cups of mayonnaise.
To make mayonnaise with a food processor / mixer at home?
Add yolks, salt. mustard powder, sugar and chilli powder with the 3 tsps of lime juice in to the blender or the steel bowl of the Mixer fitted with the chopping blade. Whisk for 15 seconds or use the slow blender speed. Now with the motor running add 1/4 cup oiluse high blender speed. As the mixture begins to thicken, continue adding oil in a steady stream alternating with hot water and the remainig lime juice.
Now stop running the mixer and remove the mayonnaise from the bowl and keep in an air tight container in the refrigerator.
