How to prepare Koottupperi for Sadya?


Ingredients needed for Koottupperi
1 cup Raw Nendran Banana cut in to pieces
1 cup Chembu cut in to pieces
1 cup Chena cut in to pieces
1 cup Kappa cut into pieces
Asafoetida as per taste
8-10 Red Chillies
2 tsps Pepper
2 tsps Rock Salt
Oil as needed to deep fry Upperi

How to prepare Koottupperi?
Take raw Nendran banana, peel the skin  and quarter it by slitting through lengthwise. Now cut it into chips but  slightly thicker pieces. Take a cup of this chips wash nicely two or three times in water and keep aside.
Now take Chembu / Colocasia.  Remove the skin by scrapping and then cut into slightly thick rounds. Adda little turmeric powder to the water and wash the chips nicely to get a good colour after frying.
Now take Chena / Yam. Remove the skin and cut into half inch small pieces. Wash the pieces nicelyin water and keep aside.
Take Kappa / Tapioca , remove the skin, then  slit and cut through it . cut into small pieces. Wash the pieces nicely and keep aside.
Now apply coconut oil liberally in a fry pan, roast pepper, red chillies and asafoetida, till they change colour. Powder these along with salt. Keep aside.
Now heat enough oil to deep fry these chips, one by one, to a golden colour.
Now mix the powdered masala with the fried chips and let cool.
Store them in an air tight container and serve as needed.
