Chinese potato / Koorka Upperi


Ingredients needed for Koorka Upperi
2 cups Koorka chopped
2 tbsps small onions chopped
4 green chillies chopped fine
1/2 tsp turmeric powder
Salt to taste
few curry leaves
2 tbsps coconut oil

How to prepare Koorka Upperi?
Scrape and remove the skin from the Koorka kizhangu. If small cut into two or if it is bigger then cut in to small uniform pieces. Wash it nicely to remove the mud and leave it in water till you are ready to cook.
Drain the water and cook koorka separately in a little water and salt to taste till it gets tender.
Heat oil in a fry pan. Add chopped green chillies and stir for a minute or till the green chillies change colour.
Now add onions, curry leaves and fry till the onions are transparent and starting to turn golden.
Now add the cooked koorka and mix well. Cover and simmer till all the ingredients blend well together.
Open the lid after 5 minutes and dry out the extra moisture.
Serve this delicious upperi as a side dish with sambar and plain rice.
