Cauliflower Kuruma

Ingredients needed for Cauliflower Kuruma
1 cup shredded Cauliflower in to small pieces
1/2 cup chopped Onion
1/2 cup carrot cubes
3 Green Chillies 
1 Small piece ginger
1 tsp red chili powder
2 tsps coriander powder
1/2 tsp turmeric powder
1 cup thick coconut milk 
Salt to taste
1 cup water
3 tsps oil 
few curry leaves 

How to prepare Caulifower Kuruma?
Wash the Cauliflower and separate in to florets, then again shred them in to smaller pieces.
Chop onion and keep aside.
Finely chop ginger and green chili. Then cut carrot into small cubes.
Heat oil in a pan, saute onion till they are golden.
Add red chili powder, coriander powder, turmeric powder, salt and a little water to mix them nicely. Stir till the raw smell goes and add cauliflower, carrot, ginger, green chillies.
As it starts boiling, simmer, cover and cook till the vegetables are cooked.
Now add the thick coconut milk and bring the gravy to boil. As it starts boiling, remove from fire and add  curry leaves.
Serve hot with rotis and phulkas
