Beef Fry, a Kozhikode / Calicut recipe


Ingredients needed for the Beef Fry, kozhikodan style
1 kilo beef
1/2 kilo onion
150 grams coconut oil
5 green chillies
1 whole pod garlic crushed / 10 -12 flakes at least
1" piece ginger crushed
1 tsp pepper corns
1 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala
250 grams chopped tomato
Coriander leaves
mint leaves
curry leaves 
salt to taste

How to prepare Beef Fry ?
Clean and wash the meat pieces, apply turmeric powder and salt to taste.  Pressure cook till done adding just enough water to cook tender.
Heat oil in a fry pan. Fry the onions to a golden colour.
Add green chillies, crushed garlic and ginger, tomatoes and pepper to the pan , saute well.
Then add chilli powder, Coriander powder, garam masala powder, fry for a minute or till the raw smell goes.
Add the cooked beef pieces and mix well.
Cover and simmer for  a while. Then open the lid and dry the gravy.
Once it dries up add the chopped leaves and a little more garam masala powder if you like.
Mix well, remove from fire. Serve hot with Rice, fried rice / Fish biryani etc.
