Ingredients needed for Aval Payasam
250 grams Aval / Beaten Rice flakes
Ghee as required
4 cups grated coconut
400 grams jaggery
water as needed
1/2 tsp cardamom powder
10 split cashewnuts
15 raisins / kismis
How to prepare Aval Payasam?
Heat ghee in a fry pan and fry the beaten rice flakes to a golden colour. Cool and then grind to a powder, should be like sooji.
Add water to another pan, add jaggery and prepare syrup. Strain and keep aside.
Take three extracts of milk ( thick, medium and thin ) from the grated coconut and keep it ready.
Now in a thick bottommed vessel, add the third extract of coconut milk and bring it to boil. As it starts boiling add the powdered beaten rice flakes. Mix well and let it boil till the mix gets thicker.
Add melted and strained jaggery to the mixand bring it boil. Stir continuously till the water dries up.
Now add the second medium milk and mix well. As it starts boiling again, add the first thick coconut milk.
Heat a little more ghee, fry the cashew nuts and raisins to a golden colour.
Garnish with the fried nuts and serve.
