Aloo Gobhi Masala / Potato Cauliflower Masala

Aloo Gobhi / Potato cauliflower is a well loved combination and can be made in different ways with different set of masala. This is one such simple recipe which can be made easily and quickly, not very spicy too. Whole garam masala is one difference which has been given to the recipe. Try it out and let me know.

Ingredients needed for the Aloo Gobhi
2 cups shredded cauliflower
2 cups potatoes, peeled and cubed
1 cup sliced onions

For tempering the dish Aloo Gobhi Masala
3 tbsp oil
1 tsp cumin seeds
1 tsp mustard seeds
3-4 red chillies broken into bits
1 " piece cinnamon
3-4 cloves
1 bay leaf
1 cup sliced onions
handful curry leaves
1 tsp coriander powder
1 tsp chilli powder

How to prepare the easy recipe of Aloo Gobhi?
If you have a microwave at home, you can cook potatoes in a microwaveable dish for 3-4 minutes / as per your microwave timings. sprinkle  2 tbsps of water ro help it cook tender. If the potatoes are not tender you can put in for a minute or two more. Shake the dish once or twice in between, so that the potatoes cook uniformly. Keep aside.
Similarly cook the shredded cauliflower pieces also nd keep aside.
Heat oil in a pan, splutter mustard seeds and cumin seeds.
Add broken red chillies, cinnamon, cloves , bay leaf, curry leaves and then the  sliced onions. Saute till the onions turn golden.
Add chilli powder, coriander powder and the turmeric powder. Mix well.
Add the cooked potatoes and cauliflower pieces with salt to taste.
Simmer, mix well, cover and cook till all the ingredients combine together well.
If you feel  the vegetables are sticking to the bottom sprinkle a little water, otherwise it is not needed.
Check to see of the vegetables are soft and tender. Remove from fire.
Serve hot as a side dish with plain rice / chappathies.

You can also cook whole potatoes in their jackets steeped in water, then peeled and cut into small pieces.
Cauliflower can be shredded and washed in lukewarm water and then steamed or cooked as it is  with the rest of the ingredients. It has to be added after the onions are added and water sprinkled to get the cauliflower cooked.
