Mathanga Pachadi

Mathan is the yellow coloured pumpkin which is sometimes greenish on the outside. It is a sweet vegetable and is used in cooking.

Ingredients needed for Mathanga Pachadi
1 cup chopped Mathanga / yellow pumpkin - chopped into small pieces
2 tbsp small onions chopped
1 tbsp ginger chopped
1 tbsp green chillies chopped
1 tsp mustard, crushed
Salt to taste
2 tbsp oil
1 cup thick coconut milk

Ingredients To Temper the Pachadi
1 tsp mustard seeds
1 small onion chopped
red chilli , broken into two
handful curry leaves chopped finely
1/2 tbsp oil
1/2 cup curds

How to prepare the Mathanga Pachadi?
Heat 2 tbsps of oil in a pan, saute chopped small onions, ginger, green chillies .
When they are golden add the pumpkin pieces, mix well and add the crushed mustard and the thick coconut milk. Simmer till the vegetables are cooked .
Heat the 1/2 tbsp oil in a fry pan, splutter mustard, curry leaves and broken red chillies.
Add to the simmering gravy. Remove from fire.
Cool. When cool, add the beaten curds to the gravy and mix well.

Notes
This is one of the dishes served on the festivals and functions, in the 'Sadya' ( feast). Mathan Pachadi is served with rice, sambar, rasam and other vegetable curries like aviyal, kalan, olan etc.
