Malabar Style Mutta Curry


Ingredients needed for Malabar Mutta Curry
3 eggs, boiled, shelled and cut into halves
2 large onions, sliced
1 cup thick coconut milk
1 cup thin coconut milk
1 tsp ginger garlic paste
1 tsp red chilli powder
1 tbsp coriander powder
A pinch of turmeric
1 tsp garam masala powder
Salt to taste

To temper:
2 tsp coconut oil (or any oil)
1/4 tsp mustard seeds
1/4 tsp jeera / jeerakam
A few curry leaves

How to prepare Malabar Mutta / Egg Curry?
Boil eggs, shell them, cut into halves and set aside.
Heat oil in a pan and splutter mustard seeds.
Add the sliced onions and fry until they turn golden brown.
Add the chilli powder, coriander powder, garam masala powder, turmeric powder and fry for 30 seconds.
Add ginger garlic paste and fry for a minute or two.
Add the thin coconut milk and simmer. Bring to boil and let it cook for about 2-3 minutes, stirring occasionally till the gravy thickens.
Simmer and add the halved eggs. Mix well and then add the thick coconut milk. Add salt, bring to boil and remove from fire. Do not let the gravy boil.
Serve with rotis, rice, Kerala appam or puttu.
