How to prepare Sambar Powder at Home?


Ingredients needed to make Sambar Powder
100 grams Red Chillies
2 cups Coriander seeds
1 tbsp Channa Dal
1 small piece of Asafoetida
2 tsps Fenugreek seeds You have to be a bit careful while adding Fenugreek seeds, as a little extra will make the Sambar powder bitter)
1 tsp oil.
Handful curry leaves

How to prepare the Sambar powder?
Take a thick bottomed kadai or a Non stick fry pan. Roast the ingredients one by one.
Add oil, put in asafoetida, as it gets puffed up add dals and fry till golden.
Then add fenugreek seeds and the Coriander seeds.
As the aroma comes out from the coriander seeds, add the red chillies and fry them.
If you like you can also add a handful of curry leaves to the mix and fry them also.
 Let cool till the mix comes to the room temperature.
Dry grind in the mixer grinder and store in air tight containers.
This mix should come to about 2 cups and should stay for a long time if you use dry spoon every time.

Points to Note:
If you feel the chillies are less you can add some more in the ingredients like make it 125 grams of red chillies.
Another way is that you can add 1/2 tsp red chilli powder or 2 slit green chillies as per your wish while making the Sambar. I prefer adding green chillies,as it gives out a nice smell.
