Thakkali Murinjakkaya Curry


Ingredients needed for the Thakkali Murinjakkaya Curry
3 tomatoes cut into pieces
1 Murinjakkaya / Drumsticks, cut into 2" pieces
1 onion sliced
3 green chillies slit
1/2 tsp turmeric powder
3 cups water
1 cup grated fresh coconut
1 tsp cumin seeds
2 small onions
3 green chillies
3 tsps coconut oil
1/2 tsp mustard seeds
a stalk or two curry leaves
1 tsp small onions chopped
1 tsp chilli powder

How to prepare the Thakkaali Murinjakkaya Curry?

In a pan, put in drumstick pieces, tomatoes, sliced onions, slit green chillies, salt and turmeric powder with 3 cups of water. Cook till the vegetables get soft. Keep aside.
Grind fresh grated coconut, cumin seeds, small onions and green chillies to a smooth fine paste.
Add the ground masala paste to the cooked vegetables and mix well.
Adjust the consistency to your taste by adding extra water.
Bring the curry to boil. Simmer the flame as you see bubbles start appearing around the sides of the pan. Do not let the curry boil.
Heat oil in a fry pan, splutter mustard seeds. Add curry leaves and chopped small onions till they are golden. Remove from fire and add the red chilli powder. Mix well and pour over the curry.
Serve with rice and other side dishes.
