Sooji / Rava Idlies


Ingredients needed for Rava Idly
1 cup Rava / Semolina / Sooji
1 cup Fresh curd
1/4 tsp baking powder
1/4 tsp Plain Eno salt
Salt to taste
1/2 cup grated coconut
2 tbsps coriander leaves chopped
1tsp ginger, chopped fine
1 tsp green chillies chopped
1 tsp oil
2 tbsps ghee
1/2 tsp mustard seeds
1 tsp cumin seeds
1/2 tsp asafoetida powder
few curry leaves
2 tbsps fried cashew nuts

How to prepare Rava Idly?
Heat oil and ghee in a pan and splutter mustard seeds, cumin seeds and asafoetida.
Add the ginger, green chillies, curry leaves and coriander leaves and fry for a few minutes on slow fire.
Add rava and fry for a few minutes till an aroma floats on the air.  Remove from fire and spread out in a plate to cool.
When cool, add fresh curd, baking powder, salt to taste and the Eno salt.
The batter should be of the idli batter consistency. Leave it aside for half an hour.
By this time the semolina would have sucked all the water in the curd.
So enough curd and water should be added again for the idli batter consistency.
Now add the corn, capsicum, cashew nuts, carrot and shredded coconut.
Mix well and pour the batter in the greased idli moulds and steam for 10 minutes.
You can serve coconut and kara chutney as side dishes for this rava idli.
