How to prepare soft and fluffy Idlies at home?


Idlis are best made at home. When they are made at home they have a better texture and taste than the ones we get from the shops and hotels. actually it is very easy to make idlis, you only have to prepare the batter the previous day by the evening and you can make the idlis in the morning, just in time for breakfast.

Now you can take the batter, mix it well with a table spoon and pour them in to the idli plates. You can either use the Idli plates / trays with the pressure cooker without weight, steamer, rice cooker or idli cooker.

Mix the batter well, from the bottom to the top of the vessel, so that rice and the dal batters blend and mix well together. Put the cooker vessel with a glass of water on high flame. let the water come to boil.
In the mean time, pour ladleful batter in to the idli trays.  Put one tray on top of the other and keep them inside the cooker on the boiling water. Close the cooker or steamer and simmer the flame.

After about 5 minutes open the cooker and check if the idlis are done. If you want to be sure just take a skewer and prick one of the idlis. If the skewer comes out clean then the idlis are cooked. Cover the cooker again, put out the flame  and leave it for 10minutes.
Open the cooker. Remove and separate the idli trays. Sprinkle little cold water and then remove each and every idli from the tray using a flat spoon dipped in cold water.
Now your home made soft and fluffy idlis are ready. Serve it with the chutney / Sambar as you like.
